Ricotta + Peach Toast

This is another satisfying, fast and easy breakfast that I turn to often. As long as I have my protein, good fats and fiber, I’m good to go.
Two slices of bread
How to Make
I take two slices of hearty bread, toasted, and spread 2 Tablespoons of ricotta on each slice.
I use regular ricotta or a vegan almond milk ricotta (like Kite Hill).
I also use goat cheese or honey goat cheese.
Top with a thinly sliced ripe peach or nectarine (pitted cherries or plums or figs are also delicious)
Drizzle with raw honey.
Top with small leaves of basil or mint.
